Cheddar, Onion, Apple and Hard Cider Fondue

Cheddar, red onion, apple and hard cider fondue

Ingredients

  • 1 1/2 pounds shredded extra-sharp cheddar
  • 2 1/2 tablespoons cornstarch
  • 1/2 teaspoon dry mustard
  • 1 tablespoon unsalted butter
  • 1 ounce finely chopped red onion
  • 1/2 cup finely diced tart apple
  • 2 1/2 cups hard cider, divided

Directions

  1. Prepare the Cheese

    Toss the shredded cheddar with the cornstarch and dry mustard so the cheese is evenly coated.
  2. Cook the Apple and Onion

    Melt the butter in the fondue pot over medium-low heat. Add the red onion and apple and cook until softened and lightly golden, about 3–4 minutes.
  3. Add the Cider and Cheese

    Pour in 2 cups of the hard cider and heat until bubbling. Lower the heat and whisk in the cheddar a little at a time, allowing it to melt smoothly between additions.
  4. Adjust and Serve

    If the fondue becomes thicker than you like, whisk in some of the reserved cider. Keep it warm over low heat. Serve with crusty bread and tart apple wedges; a little lemon juice on the apple helps prevent browning.
